Pickled ginger and beetroot

I made this last week and just tried it to see what it was like.  I have absolutely no idea in what circumstance I would try it again.  It leaves quite a pleasant aftertaste but too gingery for my tastes.  I'm going to gift it to my friend who is a very good cook and hope she enjoys it, but it's a no from me I'm afraid!
