Pork belly with apple and thyme batter pudding

I've hosted this year and although everything seemed to come together in the end it felt disastrous in parts.  I did the the pork at the wrong temperature because I turned the wrong one of two ovens down and then the foil tray I decided to use to save in washing up split and leaked all over the oven so I had to do the batter pudding separately- the pork and pudding both turned out just fine though so no harm done.  Also, the potatoes were lovely.
